With summer officially upon us, I have been scouring my cookbooks for dessert recipes that have a sense of summer something fruity, light, and creamy. Recently I have been making a blueberry cream cheese tart that my family loves. Yet, I wanted a second option that I could put together for summer picnic’s, or canyon outings. Lately my dessert go to cookbook has been Candace Nelson’s The Sprinkles Baking Book, when I stumbled upon her Banana Cream Pie recipe I decided to give it a try. Wow! I was really impressed with this recipe. From the buttery graham cracker crust to the creamiest banana custard, and sliced bananas, topped with homemade whipped cream, this pie is something your family and friends will love!
The Sprinkles Baking Book
For the graham cracker crust I used my go to out of How to Celebrate Everything book, although the only difference in Candace’s version is a little ground cinnamon. My family always gets excited for what’s to come when they smell this delicious crust baking in the oven.
Graham cracker crust is done and golden brown.
For the filling you boil half and half along with sliced banana’s and let that mixture steep in the fridge from 1 hour or up to 24 hours depending on how strong you’d like your banana flavoring to be for your pie. For me, I didn’t give myself the time to let it sit for more than an hour or so. Initially, I was concerned maybe it might need more time, however, I thought at an hour the flavor turned out perfect!
Egg yolks, lemon, sugar, and vanilla
In a medium saucepan over medium heat I whisked the sugar, egg yolks, corn starch, and my banana infused half and half.
Add some butter and vanilla.
Once your mixture has thickened, you’ll put the custard through a fine mesh sieve, and it comes out the creamiest most lovely custard.
Using part of the custard I filled my graham cracker crust, sliced bananas around the pie, added more custard and more sliced bananas to top the pie.
Topped with homemade whipped cream and your done!

I was so happy with how this recipe came together it was easy, yet the end product is so delicious! Even my husband who said banana cream pie has never been his fave loves this pie. My daughter also announced this is now her top contender in all the pies I’ve made. Thanks Candace to another great dessert recipe my family loves!
