Homemade Chicken Noodle Soup with a Soda on the side

Soups and stews have long been favorites during wintry months, and for good reason. They keep us warm, smell delicious, and with so many varieties there is one bound to please even the pickiest of eaters.  Chicken noodle soup is a classic, and has recently become one of our families favorite recipes.  Something that is many times on my weekly meal plan during the winter months.  Scouring the internet for homemade chicken noodle soup recipes.  I found many recipes to consider, however, I wanted to make my noodles from scratch, and I found a great recipe from allrecipes.com called Grandma’s Chicken Soup with Homemade Noodles.  

And now the funny part, you might be wondering where did the soda on the side come from.  A few years back we got a Kids Bop Party Pop cd, track number 7 is called Chicken noodle soup, some of the lyrics go like this “Chicken noodle soup, Chicken noodle soup, Chicken noodle soup with a soda on the side”, what?  I thought it was so silly, but chicken noodle soup with a coke on the side really does taste good.  I guess it’s like having coke with your popcorn or pizza.  Well it stuck with us, and that’s become part of the fun of having this delicious chicken noodle soup, we all have a soda on the side!

I started buying my chicken broth at Costco since we make this recipe so often, the can featured below is a large 49 oz can, I use two of these along with one  14.5 oz can of chicken broth.

I love adding carrots and celery to this recipe, not only for the added flavor and nutrition, but the added color as well.

Add the flour, salt, eggs, and water to a stand mixer with a dough hook attachment.

Flour your surface, cut the noodles and you are almost there.

As mentioned above I like to try and get my noodles as thin as possible since they plump up during the cooking process.

I typically have our soup with a side a broccoli another chance to add a few more veggies to our meal.

Another great addition to this meal, if you have the time, is a basket of buttermilk biscuits.  My go to recipe if Fluffy buttermilk biscuits out of The I heart nap time cookbook.  I use this cookbook time and time again, with many of my weekly dinners coming from this book.
